MIXED VEGETABLE RICE

 

 

INGREDIENTS

 

Rice

Sambar Masala Powder

2 tbsp

Carrot (cut into small pieces)

Coriander leaves (finely chopped)

A few

French Beans (cut into small pieces)

Oil for tadka

Boiled Potatoes (mashed)

Chana Dal

Red chilly dry (sabut)

METHOD

 

Boil rice in the normal way. Heat oil in a kadahi. Make tadka by adding heeng, mustard seeds, kari patta, chana dal, urad dal and sabut red chilly. Add groundnuts to the tadka and fry it for about a minute. Put all the vegetables except tomatoes and mashed potatoes and add little water. Cook it for 5-7 minutes till half done. Add tomatoes and cook a little more for about a minute. Add mashed potatoes, salt to taste, haldi, sambar powder, imli water and sugar. Add boiled rice and mix it well. Cover it with lid and simmer for 5-7 minutes. The rice should not get too dry. Sprinkle chopped coriander leaves. Serve hot.
