Hello, this is Lakshmi Jayaraman once again from London. I hail from Tamil Nadu,
India, but am staying for a brief period in London. I love cooking and
experimenting with new ideas. I would like to contribute one of my recipes for
viewers to try out. Please give in your opinion at Lakshmi@waitrose.com.
INGREDIENTS
Palak : 2 small bunches
Peas (fresh
or frozen) : 1 cup
Methi leaves : 1/2 cup leaves
Moong dal (yellow) : 1/4 cup
Ginger : a very small piece
Garlic : 2 pods
Green chilly : 1
Onion (small) : 1
Cream : 3 to 4 tbsp
Butter :1/2 tsp
Salt : to taste
METHOD
Wash the spinach leaves and
methi well. Put all the ingredients other than cream and butter in a pressure
cooker and cook it. When cool blend it in a mixer. Put the palak paste in a
pan, add salt and boil for a few minutes. Add a little hot water if the soup
is too thick. Serve in soup bowls, adding a swirl of cream and blob of butter.
