VEGETARIAN TACO (TOSTADA)
Hi, I am Niyati Thakore from San Jose, CA, USA. I am a software engineer and cooking is my passion! This Recipe is my mother-in-low's speciality. We enjoy it mostly during our family gathering with movies and cokes. I hope you will like it too !!! My e-mail is nthakore@cisco.com
INGREDIENTS
1/2 lb Pinto Beans (use only pinto beans (brown) (you can also use rajma beans or fava beans, if you can't find pinto beans)
*10 (flat round) Tostada shells (from grocery store)
3-4 large finely chopped Salad Tomatoes.
2-3 finely chopped Green Bell Papers (capsicums).
1 finely chopped Large Onion.
*1 bowl full thick & chunky Salsa (we use Pace thick & chunky salsa).
1 Lettuce.
24 oz. packet Yellow Cheddar Cheese (shredded).
Garlic powder, Oil, Cumin Seeds (jeera), mustard seeds (Rai) Salt, Hing.
* If you don't find these ingredients, I have provided at the end recipe of tostada shells and salsa.
Method to prepare beans & taco shells

Wash & Soak Pinto beans for 3-4 hours & cook them in the pressure cooker. | |

In the same pressure cooker, mash boiled beans to the paste consistency (not too thin, not too thick). | |
|
Heat beans on low flame, add salt & lots of garlic powder (2/3 tablespoon, if you are a garlic lover else according to your taste. But this beans goes very well with garlic.) | |
|
Heat 2 tablespoon of oil, add 1 tsp. jeera and 1 tsp. mustard seeds & when seeds splutter, add 2 -3 tsp hing (makes beans lite to digest), add this tadka to the beans. | |

Cover & let it cook for 15-20 minutes on the low flame. | |
|
Wash lettuce leaves & chop finely. | |
|
Roast Tostada shells in the oven for 1-2 minute each side. Be very careful as tostada shells burns quickly. Just roast them little brown on both side in your small toaster oven. |
Making of Tostada-Taco

Put onions, lettuce, tomatoes, salsa, cheese, bell peppers in bowls put everything in front of you. | |

Take one tostada shell. Spread large spoon full of hot beans over tostada. | |
|
Sprinkle cheese. | |
|
Sprinkle Salsa, green bell peppers, tomatoes and onions. | |
|
Sprinkle Lettuce & cheese at last. |
Now eat quickly before it gets soggy.

Prepare dough out of maize flour(makki atta). | |

Roll makki roti (not too thin nor thick). | |
|
On griddle roast makki roti on two sided until it becomes hard and crisp (do this using cloth and press roti with cloth side by side, just like if you are making khakhra) | |

Prepare 10 makki rotis like this and your tostada shells are ready. |
Note: Please prepare
shells as hard as possible.
* Recipe for Salsa ( 1 cup)
3 large tomatoes
1 tblspoon tomato paste
1 onion
2-3 Red chillies
1-2 green chillies
salt and sugar
tomato ketchup 2-3 tblsp.
Coriander (Dhania)
Boil 2 tomatoes in hot water. Extract the juice using mixture.Keep aside. Finely
chop onions,red chillies and green chillies and 1 tomato. Add chopped things to
tomato juice along with tomato paste, ketchup, salt and sugar. Mix well and make
thick paste. Mexican Salsa is a hot dish. You can make it hot by adding red
mirch powder and 1 green chilly juice or use hot & chilly sauce. Add
Coriander leaves at the end. Your Salsa is ready.
