Hi, I am Rachita Gupta currently residing in Helsinki, Finland. Cooking , reading and web surfing are my interests. Here I am giving the recipe of Sooji Pizza which is the Indianised version of the starchy and not so healthy Pizza. The vegetables make it very nutritious and it is easy and fast to make. INGREDIENTS
Semolina
(Sooji) : 2 cups
Water
Salt
& black pepper : to taste
Curd
: 3 tsp
Green
chillies : 1-2 finely chopped
Coriander
: 1 tsp finely chopped
Onion
: 1 finely chopped
Tomato
: 1 finely chopped
Capsicum
: 1 chopped
Cabbage
: 1/2 cup finely chopped or grated
Oil
METHOD

Make a batter of the semolina with the water. Add salt, black pepper, curd, coriander and green chillies to the batter. | |

Put the pan on gas and when hot put 1/2 tsp of oil in it. When it begins to splutter add a little of the batter to make a moderately thick pancake. Do not make it too thin. Reduce heat. | |

Take the chopped vegetables and sprinkle them on top of the pancake. With your hand or a spatula press them lightly so that they go a little inside the surface of the cooking pancake. | |

Cover the pan with a lid and let it cook for 1-2 minutes. After that flip the pancake and cook the other side. Press lightly with spatula so that the vegetables on the other side are well cooked. | |

After 2-3 mins change the side again so that vegetables on pizza are on the top. Sprinkle a little black pepper and coriander on top. | |

Take
off and serve with chillie sauce or tabasco sauce. |
Makes: 4-5 Pizzas.
