ORANGE CAKE
INGREDIENTS

Thin small strips of orange peels (white pith scraped) |

METHOD
Boil cup of water and 1 tbsp. of sugar. Add the orange peels for half a minute. Strain it through a strainer. Sieve flour, powdered sugar and soda together. Keep aside. Mix sugar and malai and leave it for 10 minutes. Wait till the sugar dissolves. Do not over beat. Add sieved mixture, orange peel, color and essence. Add orange juice (as much as required) to the batter. The batter should be smooth, light and of a dropping consistency. Beat well. Take a cake tin and grease it with butter. Put butter paper according to its size and dust with flour. Bake it in a preheated oven at 210C/400F for 10 minutes. Lower the temperature to 150C/300F and bake for 35-40 minutes. If a knife inserted in the center comes out clean, remove from the oven after 5 minutes.
